Crustless Ham and Cheese Quiche
Simple crustless ham and cheese quiche that is low carbohydrate and uses leftover ham. It is perfect for breakfast, lunch or dinner. Just add a side salad and you will be ready to conquer the day.
This is one of the easiest and tastiest recipes ever. Great use of leftovers especially after the holidays when you have all that extra ham.
I’ve had quiche with crust and without crust. I can tell you that I will skip the crust with this crustless ham and cheese quiche from now on and have a cocktail instead. I don’t miss the crust with this recipe.
The best part about quiche is you can make so many combinations. Almost like a clean the fridge before the grocery store run situation. I’m not much of a brunch person but this quiche changed my mind. I did a little switcharoo for the heavy cream and used almond milk. Nobody noticed! I was happy because I didn’t have to run to the store for heavy cream.
Easily make this quiche vegetarian just leave out the ham. Add plenty of vegetables and the cheese. This Crustless Ham and Chard Quiche only uses 2 eggs, and who doesn’t have 2 eggs in their fridge. Or get to know your neighbors and ask them.

One of the benefits of gardening is I can grab salad ingredients for a side salad to go with any meal but especially for quiche.
Crustless Ham and Cheese Quiche
Ingredients
- 1 cup ham-diced
- 1 cup zucchini-shredded
- 1 cup cheddar cheese-shredded
- 1/2 cup sauteed onion-diced
- 1 cup chopped broccoli-blanched
- 8 eggs
- 1/2 cup Almond milk
- 1/2 tsp dry mustard
- salt and pepper
Instructions
- Preheat oven to 375'. Grease a 9" pie plate.
- Sauté onion and set aside to cool. Blanche broccoli and set aside to cool.
- Use a paper towel and squeeze the zucchini to get out as much liquid as possible.
- Combine the ham, zucchini, onion, broccoli and cheese in the greased pie plate.
- Whisk eggs, milk and seasonings and pour over the ham mixture.
- Bake for 40 minutes uncovered or until a knife inserted in the center comes out clean.
