Edamame Salad-Mint and Parmesan
Ingredients
- 3 Tbsp Olive oil
- 2 Tbsp Dehydrated onion
- 1 Tbsp Lemon juice
- 1 Clove Garlic-grated
- 1/2 Tsp Salt-plus more for boiling edamame
- 1/2 Tsp Black pepper
- 2 Cups Edamame shelled-frozen
- 1/2 Cup Parmesan cheese-shredded
- 1/3 Cup Mint-coarsley chopped
- 1/4 Cup Parsley-chopped
Instructions
- Combine oil, onion, lemon juice, garlic, salt and pepper in a large bowl, set aside.
- Bring 1 quart water to a large saucepan over high heat. Fill a large bowl with ice water. Line a large plate with paper towels.
- Add 1 tablespoon salt and edamame to the boiling water and cook for 5 minutes. Drain edamame into a colander and then nestle colander in the bowl of ice water. Let sit in water for 5 minutes.
- Drain edamame and spread out on the paper towel lined plate. Pat dry with additional paper towels.
- Add edamame to the bowl with the dressing and toss to coat. Add Parmesan, mint and parsley and toss to combine. Season with salt and pepper to taste. Serve.
