Kale Goat Cheese Frittata-Airfryer
Ingredients
- 4 Eggs
- 1 Tbsp Milk or almond milk
- 1/4 Tsp Salt
- 1 Tbsp Olive oil
- Salt and pepper
- 1 Bunch Kale-leaves stripped, use frozen if that's all you have
- 1/2 Cup Roasted red pepper
- 1/4 Cup Goat cheese-crumbled
- Chopped chives-garnish
Instructions
- Cut kale into 1" strips. Heat oil in a non stick skillet and cook kale for 3 minutes. Season with salt and pepper to taste.
- Spray a round 6" cake pan generously with cooking spray.
- Whisk eggs, milk, and salt in a medium bowl. Stir in kale, red pepper and goat cheese.
- Pour egg mixture into prepared pan and place in airfryer. Set airfryer to 350' and cook frittata for 25 minutes until golden brown. Internal temp should be 180'.
- Transfer pan to wire rack and rest for 5 minutes.
