Lemony Thyme Glazed Salmon
Ingredients
Salmon
- 1/4 Cup Table salt
- 1/4 Cup Sugar
- 4 6oz Salmon filets
- 1/2 Tsp Vegetable oil
- 1 Tbsp Parsley-minced
Lemon Thyme Glaze
- 1/4 Cup Lemon juice
- 3 Tbsp Water
- 2 Tbsp Sugar
- 4 Tsp Soy sauce
- 1 1/2 Tsp Cornstarch
- 6 Sprigs Thyme
Instructions
- Preheat oven to 300'
- Dissolve salt and sugar in 2 quarts of water in a large container to brine salmon. Let sit in the brine at room temperature for 15 minutes. Remove salmon from brine and pat dry with paper towels.
- While salmon is brining make the glaze.
- Combine all the glaze ingredients excep thyme together in a small saucepan. Cook over medium low heat, stirring constantly until thickened. Add thyme and cook for 3 minutes. Remove from heat and set aside. Remove thyme sprigs before serving.
- Take 2 tablespoons of the glaze and set aside.
- Heat a 12" non-stick ovensafe skillet over medium high heat until it begins to smoke. Place salmon flesh side down in the skillet until browned, 2-3 minutes.
- Flip salmon and reduce heat to low. Brush the salmon with the reserved glaze.
- Transfer skillet to the oven and cook until the salmon registers 125' mid rare to 130', 10-12 minutes.
- Using a clean brush, brush the rest of the glaze onto the salmon and sprinkle with parsley. Serve.
