Ingredients
  

Salmon

  • 1/4 Cup Table salt
  • 1/4 Cup Sugar
  • 4 6oz Salmon filets
  • 1/2 Tsp Vegetable oil
  • 1 Tbsp Parsley-minced

Lemon Thyme Glaze

  • 1/4 Cup Lemon juice
  • 3 Tbsp Water
  • 2 Tbsp Sugar
  • 4 Tsp Soy sauce
  • 1 1/2 Tsp Cornstarch
  • 6 Sprigs Thyme

Instructions
 

  • Preheat oven to 300'
  • Dissolve salt and sugar in 2 quarts of water in a large container to brine salmon. Let sit in the brine at room temperature for 15 minutes. Remove salmon from brine and pat dry with paper towels.
  • While salmon is brining make the glaze.
  • Combine all the glaze ingredients excep thyme together in a small saucepan. Cook over medium low heat, stirring constantly until thickened. Add thyme and cook for 3 minutes. Remove from heat and set aside. Remove thyme sprigs before serving.
  • Take 2 tablespoons of the glaze and set aside.
  • Heat a 12" non-stick ovensafe skillet over medium high heat until it begins to smoke. Place salmon flesh side down in the skillet until browned, 2-3 minutes.
  • Flip salmon and reduce heat to low. Brush the salmon with the reserved glaze.
  • Transfer skillet to the oven and cook until the salmon registers 125' mid rare to 130', 10-12 minutes.
  • Using a clean brush, brush the rest of the glaze onto the salmon and sprinkle with parsley. Serve.
