Moo Shu Pancakes

Moo Shu pancakes are one of my favorite things to order in a Chinese restaurant. A cross between a crepe and a tortilla. Spread plum sauce on the pancake and then load it up with pork moo Shu filling. Fold it up like a burrito and munch away.

So easy to make with just a few pantry ingredients. Very similar to flour tortillas with the addition of sesame oil.

Start by making the dough. You only need to let the dough rest until it’s cool enough to handle. Careful not to burn yourself.

After kneading dough for minutes, roll dough into a foot long rope. This makes it easy to cut the dough rope into individual pieces.

Then cut dough into 12 equal pieces, roll into a ball. You will will roll these out in pairs so try to get them as similar in size as possible.

After flattening the dough slightly, brush 1 side of each flattened piece of dough with sesame oil. Place the oiled sides together, flatten to about 3″. The sesame oil gives that umami oil which adds another dimension of flavor.

Using a rolling pin, roll the dough to about a 7-inch circle. Repeat with each pair to make 6 pancakes.

Use a non-stick skillet or seasoned cast iron pan on medium-low heat. Cook 1 pancake at a time for about 1 minute until the bottom is browned. The top will bubbly. Flip and cook for about 1 more minute.

Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup boiling water
  • 1 tbsp sesame oil

Instructions
 

  • Place flour and salt in a large bowl and stir. Pour in the water. and stir with a fork. If the dough is crumbly add a little more water. Once the dough starts to come together and it's cool enough, knead the dough in the bowl. Move to a board or your counter and knead for a couple more minutes, until dough is smooth and elastic.
  • Roll dough into a foot long rope and cut into 12 pieces. Be mindful to keep the pieces the same size so they will roll out well. Roll each piece into a ball and flatten slightly.
  • Brush 1 side of each flattened dough piece with sesame oil. Place the oiled sides together and press to a 3" circle. Using a rolling pin roll out to a 7" circle aiming for as nice a circle as you can. Repeat making 6 pancakes.
  • Heat a non stick or seasoned cast iron skillet over medium-low heat and cook for a minute until top is bubbly. Flip over and cook for another minute. Remove to a plate and continue cooking the rest of the pancakes. Pull apart the pancakes to magically make 2 super thin pancakes. Watch out for the steam.
  • Serve with plum sauce and pork filling.
