Mushroom Beef Burger

Ingredients
  

  • 12 oz white mushroom-ends trimmed
  • 1 lb ground beef
  • 1 1/4 tsp salt
  • 1 1/2 tsp black pepper
  • 4 slices favorite cheese
  • 4 hamburger buns-toasted

Instructions
 

  • Process mushrooms in a food processor until paste forms. Paste will resemble thick oatmeal. Transfer paste to a large bowl and cover.
  • Microwave mushrooms until liquid begins to boil, 3 minutes, stirring halfway through. Transfer to a fine mesh strainer, press mixture with a spatula to extract the liquid. Remove 1/2 cup of liquid and discard. Return mushrooms back to bowl and refrigerate for 20 minutes.
  • Return mushrooms back to food processor. Add in beef and salt, process mixture until uniform and pulls away from food processor bowl, Divide mixture into 4 patties, shape into 4 1/2" diameter. Sprinkle each side with pepper.
  • Heat oil in a 12" skillet over medium heat. Place patties in skillet and cook until browned 7 minutes per side. Temperature registers 135' for mid rare and 155' for mid well. Place cheese on burger and cook for 1 more minute. Transfer to a plate and let rest for 5 minutes. Place on buns and serve with your favorite condiments.
